How Sweet Potato Hash became a breakfast staple in my kitchen.

Besides, the fact that it is vegan and absolutely delicious, it's also like the perfect wake and bake go to breakfast. There's so much flavor packed into such an easy recipe that I have learned to prepare this without needed to follow the cooking instructions. I'm so grateful for the time that I spent, working with Vegan Chef, Jenné of Sweet Potato Soul. For that year that I was vegan, she changed my life and I would argue that it started with this recipe. It's only six years later that I realize I was engaging my ECS before I even knew that's what I was doing.

Though only the cannabis plant produces THC, this suggests that common foods and herbs may have a somewhat similar effect on the human endocannabinoid system. Research has shown that many common foods, plants, and herbs contain molecules that are cannabinoid-like in function. Globally, sweet potato is the seventh most important staple and for good reason. Sweet potatoes contain complex carbs and vitamin B which produce serotonin, the pleasure chemical in the brain. Sweet potatoes are also regarded as a functional food, as they provide, in addition to nutrients, other physiological benefits.

Sweet Potato Hash Ingredients

▢ 5-6 tablespoons coconut oil

▢ 1 large red bell pepper, diced

▢ 1 medium yellow onion, diced

▢ 1 tsp sea salt, to taste

▢ 3 sweet potatoes, cut into small cubes

▢ 1 tsp fennel seeds

▢ 2 tsp of sweet smoked paprika

▢ 1 tsp red pepper flakes

▢ 1 tsp freshly ground black pepper

▢ 1/4 cup of chopped parsley
